Veggie Poke Bowl
This veggie poke bowl has been my hyper fixation meal, so I thought I'd share it. When I lived in Seattle, I had access to delish veggie poke, and now that I am in the middle of nowhere, I have had to get creative. I’m not reinventing the wheel with this recipe; it's just grabbing the ingredients I have on hand.
Ingredients:
-Sushi rice
-1 Avocado
-Quick pickled shallots
-Shaved carrots
-Cooked edamame
-Toasted sesame seeds
-Cilantro
-Kewpie mayo
-Soy Sauce
-Sriracha
-Nori
I don’t measure when making a poke bowl; I prep my ingredients and toss them together like a salad over my rice. Then I drizzle the condiments on top and eat it with seaweed.
Meal Prep:
-Prepare Rice (I use an Instant Pot)
-Shave carrots
-Cut shallots thin/ soak in vinegar
-Toast sesame Seeds
-Cook frozen edamame in the microwave
